I made this salad dressing the other night with good success. This recipe produces about 3 plus cups of a beautifully orange-colored salad Japanese-styled salad dressing.
Ingredients:
1/2 cup chopped onion
1/2 cup peanut oil
1/3 cup rice wine vinegar
2 tablespoons water
2 tablespoons minced fresh ginger root
1 stalk of celery, chopped
1 carrot, chopped
1 plum tomato
2 teaspoons soy sauce
1 teaspoon fish sauce
2 teaspoons white sugar
2 teaspoons lemon juice
1 teaspoon chopped garlic
ground black pepper to taste
Toss all of the above into a food processor for 10-15 seconds. I like it with some texture so don't overdo it. Serve on a mixed green salad with sliced almonds and perhaps some dried cherries. Wonderful flavor!

ReplyDeleteOk, I'm going to try it. Aside from fish sauce, which I still find very intimidating, I think I now have everything in my fridge! It looks awesome!
